Loaded Chicken Veggie Baked Potato

This week, as I was preparing to leave for a business seminar, I decided to scale back on my grocery shopping. All I bought was orange juice, bacon, and frozen berries for some snacks and shakes that I had planned for the week. But what I had at home turned out to be enough to make two delicious meals!
Have you ever looked at a left over chicken breast sitting in the fridge and thought to yourself “Ugh, I just can’t stand to eat another chicken breast?” Yeah, that was me this week. But instead of throwing it away or letting it grow another colony in my fridge, I got creative with it. Below is the result of creative cooking and war on debt money management. Enjoy!
Loaded Chicken Veggie Baked Potato
- 1 leftover chicken breast
- 1 cup of frozen veggies
- 2 small potatoes of your choice (or 1 large one)
- olive oil
- salt and pepper to taste
- Preheat oven to 400 degrees.
- Wash potatoes and stab with a fork
- Place potatoes in the oven for 1 hour
- Turn burner on Medium Heat
- Pour olive oil in skillet (drizzle as much as you’d like)
- Place chicken breast in skillet and shred with a fork until breast is torn apart.
- Pour veggies in skillet.
- Cover skillet and sauté for 10-15 minutes (until veggies are done but still crisp)
Once veggies and chicken are done, take off burner. Place finished baked potatoes on a plate and cut them in half. Smash potatoes down, add butter if desired, and place half of the chicken and veggies on top.
Put the other half of chicken and veggies in a container in the fridge for a second meal.
*This recipe is for chicken that has already been cooked and refrigerated. If using frozen or fresh chicken, be sure chicken is cooked thoroughly.
Weight Management Tips:
If you need to lose weight, replace olive oil and butter with coconut oil.
For Cystic Fibrosis patients trying to gain weight, use more butter – you may also substitute coconut oil as it has more health benefits and will give your body more protein.
